1) uncomment WaylandEnable=false in /etc/gdm3/custom.conf , then reboot your VPS.
2) Click on your name on the login screen in the console. When prompted for your password, click the gear icon at the bottom right of the screen, and choose "xfce...." instead of the default "Ubuntu."
3) Start AnyDesk on the Ubuntu desktop.
4) Connect it to another PC.
